1. Never store Onions and Potatoes together because both produce a gas that causes either of them to spoil quickly.

2. Put two or three orange leaves in your hot palm oil on the fire. Let the leaves turn black before removing it. By then your palm oil becomes pure groundnut oil also giving your food a nice taste.

3. To avoid feeling a peppering hotness on your hands after cutting pepper with bare hand scrub your hand with salt and red oil then wash it.

4. If you happen to over salt a pot of soup, just drop in a peeled potato. The potato will absorb the excess salt.

5. If your Soup or Stew goes sour while warming it, add little piece of Charcoal and remove after warming, the taste will come back.

6. Never put citrus fruits (oranges, lemon, lime, etc) or tomatoes in the fridge. The low temperature degrades the aroma and flavor of these fruits.

7. When storing empty airtight containers, throw in a pinch of salt to keep them from getting stinky.

8. If your salt is becoming lumpy, put a few grains of rice in with it to absorb excess moisture.

9. To reuse cooking oil without tasting whatever was cooked in the oil previously, cook a 1/4" piece of ginger in the oil. It will remove any remaining flavors and odors.

How to make simple tomato paste step by step guide

How to make sweet zobo drink
Ingredients
1) zobo leaves
2) sugar
3) pineapple and cucumbers
4)ginger
5) Any flavour of your choice
Method
1) set your big pot on fire and pour enough quantity of water
2) wash your zobo leaves in a cold water to remove dirt( don't leave it in the water for long, just put it in the water and quickly use your hand to shake it and remove it from the water)
3) pour the zobo leaves in your pot. Add your sliced pineapple, ginger, sliced cucumbers and cover it till it has boiled very well and the water has changed to a red wine colour
4) remove the pot from the fire and separate the zobo liquid from the leaves. put the zobo liquid aside cover it and leave it to cool
5) after it has cool add your sugar and flavour in the desired quantity but don't let the sugar and flavour to be too much in the zobo
6) package it in your bottles and put in it the fridge
Serve chill
Note: you should wash and peel the back of the pineapple if you want but if you don't want you can just wash the back very well, sliced it , and add it to the zobo like that ( it depends on how you want it).
Making of zobo for selling is very lucrative because people like it very well and some prefer It to other drinks. You may decide to start your own zobo business you can sell it together with either doughnuts, chin chin, mini cakes etc and make your money. All you need is to learn how to do it very well and how to market it. If your zobo it sweet and taste better than that of others it will stands out and before you know it people will begin to patronize you.

Bitterleaf soup (Ofe Onugbu)

Ingredients
Washed and squeezed bitterleaf – A handful
10 small Cocoyam
Red Palm Oil or Akwu
Assorted Beef: Includes best cut, shaki (cow tripe)
Assorted Fish: Dry Fish and Stock Fish, prawns
Pepper, salt and ground crayfish
3 stock cubes
1 teaspoon Ogiri Igbo

Pls note:
-If you are outside Nigeria, you can use dried, washed and squeezed bitter leaves but you need to first of all make the bitter leaves soft and fresh again before adding them to the soup.
-You can use cocoyam flour.
-Ogiri Igbo is the mpa of this soup, it gives it a unique taste.

Before you cook:
-Wash and cook the cocoyam till soft.
-Remove the peels and use a mortar and pestle to pound the corms to a smooth paste.

Cooking Directions:
-Boil the shaki (cow tripe), stock fish and dry fish in 1 litre of water till they are well done. First sign of a done shaki is that the cuts will start curling on itself.
- the beef and add to the pot of shaki etc. and continue cooking. When the meat is done, add 3 cubes of Maggi/Knorr and cook for 5 minutes.
-Add pepper, ground crayfish, Then add the cocoyam paste (in small lumps) and the palm oil ,
-Cover the pot and leave to cook on high heat till all the cocoyam lumps have dissolved. You can add more water if you feel that the soup is too thick. Add bitter leaf (Onugbu) cook
-Add salt to taste and the soup is ready.

Serve with your favourite African swallow.

ORANGE CAKE WITH CHOCOLATE CHIPS

INGREDIENTS

➡3 eggs;
➡380g (3 cups) all-purpose flour;
➡1 medium orange;
➡120ml (½ cup) milk;
➡120ml (½ cup) vegetable oil;
➡180g (1 cup) sugar;
➡16g (3 ⅓ tsp) baking powder;
➡a pinch of salt;
➡80g (½ cup) chocolate chips.

METHOD

➡Slice unpeeled oranges and blend them with eggs, milk, and vegetable oil using immersion blender

➡When the mixture is smooth and there are no orange chunks left, add sugar, salt, flour, and baking powder.

➡Mix until smooth.

➡Fold chocolate chips into the batter.

➡Pour the batter into a parchment-lined baking pan and bake at 180°C/350°F for 50 minutes.

➡When the cake has cooled down, remove it from the pan and dust it with powdered sugar.
